Mocha Brownies

Coffee doesn’t make brownies taste like coffee—it makes chocolate taste more like chocolate. This is the kind of bake that feels like a cabin weekend: simple, rich, and worth the calories.

Yield: 9–12 brownies

Ingredients

  • 115 g butter
  • 200 g sugar
  • 2 eggs
  • 1 tsp vanilla
  • 65 g cocoa powder
  • 75 g flour
  • 1/2 tsp salt
  • 1–2 tbsp very strong brewed coffee (cooled)
  • Optional: chocolate chips, walnuts

Method

 

  1. Heat oven to 350°F (175°C). Line pan.
  2. Melt butter, whisk in sugar, then eggs and vanilla.
  3. Whisk in cocoa, salt, flour.
  4. Stir in strong coffee (and chips/nuts if using).
  5. Bake 22–28 min until set at edges, slightly soft in the center. Cool before slicing.
